No Bake Cookies - Country Recipes Style

An all-time favorite recipe in many country homes is the no bake cookie. A delicious combination of oatmeal, chocolate, sugar, milk and butter these cookies are a snap to make and a particular fan favorite. Here is a sample recipe with a few variations for your cooking pleasure.


No Bake Cookies

You Will Need:
1 ½ cups of white sugar
3 cups of oats
1 cup of butter
1-teaspoon vanilla
No Bake Cookies 5 tablespoons of unsweetened cocoa powder
½ cup of milk
Wax Paper to line your pan and receive the cookies.

To Make No Bake Cookies Place three cups of oats in a large mixing bowl and set aside. Lay out a good sized piece of wax paper. Bring milk, sugar, butter, cocoa and vanilla to a boil in a medium saucepan over medium heat stirring frequently. It is advised that you bring this mixture to soft ball candy stage; however, this is not strictly required. On your candy thermometer, this will be approximately 235 degrees Fahrenheit, or when a small amount is dropped in cold water, it forms a small pliable ball.

Once it has come to a rolling boil, quickly remove from heat and pour over oats. Stir the mixture quickly but thoroughly and then spoon cookie sized portions onto your wax paper. It is a good idea to keep them from touching, but not absolutely necessary.

Options: This is of course only one recipe option among many. Depending on your particular taste, you may want to add peanuts, peanut butter, coconut or even raisins. You can also omit the chocolate if you like and add cinnamon flavoring for a unique twist on a country favorite. Do not be afraid to experiment with ideas for tasty no bake cookies.
